Some users on macOS10.14 have experienced issues logging back into Mac Mail after Modern Auth is applied to their accounts. Troubleshoot sign-in issues with Office modern authentication when you use AD FS

Modern authentication (ADAL) with AD FS requires the /adfs/services/trust/13/windowstransport endpoint to be enabled. But primarily I am guessing you are changing the server name. This does not enable any oauth list entry that may be available for that server. Then the entry will be in the list for you to select.
